Mustard Glazed Potatoes and String Beans

This is a really interesting but great and flavorful recipe that has garlic, onion, mustard, soy sauce and maple syrup. You’ll have to try it to see why it’s so great.
Ingredients -
2 Pounds Potatoes (Cut into 1" pieces)
1/2 Pound String Beans (halved, ends cut & discarded)
1 Medium Yellow Onion (thickly cut)
2 Cloves Garlic (minced)
3 Tablespoons Soy Sauce
1/4 Cup Maple Syrup
3 Tablespoons Dijon Mustard
2 Tablespoons Water
 
Preparation:

1. Preheat the oven to 400º F.

2. In a 9 x 13 inch casserole dish place the vegetables together.

3. Stir together the garlic, soy sauce, maple syrup, mustard and water until mustard is well blended in a mixing bowl.

4. Pour over the vegetables and mix until everything is well coated.

5. Cover with foil and place in the oven and bake for 25 minutes.

6. Toss everything after removing from the oven, using a slotted spoon to drip the sauce over the veggies.

7. Turn the oven down to 350º and cook for 25 more minutes uncovered.

8. Remove them from the oven and toss them again.

9. Then cook for an additional 25 minutes uncovered.

The flavors of soy sauce, maple syrup and Dijon really meld together well because of the salty sweetness. If you experiment you can make some really great low calorie dressings for your salads at home. Try it. You’ll be surprised.

My favorite type of beans to use in this recipe is the long beans. I just love the flavor they have along with the texture. Sometimes they are a little harder to find but try. It’s worth it.
