Corn Casserole

You can’t get any simpler than this casserole dish and it’s really tasty and very hardy.
Ingredients -
1 Can Cream-Style Corn (15 oz)
1 Can Whole Niblet Style Corn (11 oz)
2 Eggs
1 Cup Sour Cream
1 Package Dry Corn Bread Mix
1/2 Cup Butter (melted)
1 Cup Cheddar Cheese ( shredded)
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Take a 12x8-inch casserole dish and grease it with non stick spray or crisco.

3. Combine cream corn, niblet corn, eggs, sour cream, Muffin mix, and butter in a mixing bowl.

4. In the casserole dish pour the mixture.

5. For 30 minutes bake in a preheated oven until golden brown.

6. Sprinkle cheese over the top once you have removed from the oven.

7. Return to the oven for 15 minutes or until the center is firm.

This recipe is great if at the last 15 minutes you also sprinkle 1/2 cup of parmesan cheese. It gets golden brown and the more cheese the better in my book.

This dish is a great side dish or as a main dish. It saves in the fridge for up to a week so you can make it and it’s great because you can also make patties out of it and fry them up. They are super and different.
