Chicken Broccoli and Rice Casserole

This is one of the all time classic casserole dishes and it is wonderful and delicious. It is a really great and simple recipe that is bound to be a family favorite.
Ingredients -
2 Cups Cooked Rice
3 Cups Cooked Broccoli
1 Cup Sour Cream
1/3 Cup Mayonnaise
1 Tablespoon Lemon Juice
1 Can Condensed Cream of Chicken Soup
Cheddar Cheese (grated, 10 ounces)
1/2 Teaspoon Salt
1/4 Teaspoon Fresh Cracked Black Pepper
4 Chicken Breasts (cooked and shredded)
 
Preparation:

1. Preheat the oven to 350.

2. With butter or nonstick cooking spray grease a 9x13x2-inch baking dish.

3. Evenly in a baking dish spread rice in a layer.

4. Make a second layer with the broccoli.

5. Mix sour cream, mayonnaise, lemon juice, and condensed soup, half of the grated cheese, salt, pepper and chicken in a large bowl.

6. Pour mixture over the broccoli and top with remaining grated cheese.

7. Bake for 40 minutes. Let stand for 5 minutes before serving.

Sometimes I love to add additional vegetables like carrots and mushrooms and cauliflower to the recipe to give it extra nutrients, flavor and texture.

This is a great main course. I like to serve it with a simple side salad. Nothing more is necessary since this dish is so hardy.
